Ingredients
Salt, Paprika, Red chilli, Coriander, Turmeric, Clove, Carom, Nigella, Cumin, Ginger, Black pepper, Cardamom, Large cardamom, Garlic, Onion, Acid: Citric acid, Maltodextrin, Cane sugar, Canola oil, Anticaking agent: Silicon dioxide.

Directions for use
Add 1 tablespoon garlic paste and hooves into 15 cups of hot water and boil for 10 minutes. Drain the water. In 12 cups of boiling water add hooves, half sliced onion, ginger and garlic paste. Cover and cook on low heat until the hooves are tender (goat/lamb 3–4 hours, cow 6–8 hours). Separately heat oil or ghee and fry remaining onion until golden. Add Shan Paya Mix and yoghurt. Stir fry for a few minutes and pour into the Paya curry. Cover and simmer on low heat for 30–45 minutes. Garnish with fresh coriander, green chillies and Shan Zafrani Garam Masala. Serve hot with naan and boiled rice.

Zutaten
Salz, Paprika, Roter Chili, Koriander, Kurkuma, Gewürznelken, Bischofskraut, Schwarzkümmel, Kreuzkümmel, Ingwer, Schwarzer Pfeffer, Kardamom, Großer Kardamom, Knoblauch, Zwiebel, Säure: Zitronensäure, Maltodextrin, Rohrzucker, Rapsöl, Trennmittel: Siliciumdioxid.

Zubereitung
1 Esslöffel Knoblauchpaste und Hufe in 15 Tassen heißem Wasser 10 Minuten kochen, Wasser abgießen. In 12 Tassen kochendem Wasser Hufe, halbierte Zwiebel, Ingwer- und Knoblauchpaste zugeben. Abdecken und bei niedriger Hitze garen, bis die Hufe weich sind (Ziege/Lamm 3–4 Stunden, Rind 6–8 Stunden). Separat Öl oder Ghee erhitzen und restliche Zwiebeln goldbraun anbraten. Shan Paya Mix und Joghurt hinzufügen, kurz anbraten und zur Paya geben. Abdecken und bei niedriger Hitze 30–45 Minuten köcheln lassen. Mit frischem Koriander, grünen Chilis und Shan Zafrani Garam Masala garnieren. Heiß mit Naan oder Reis servieren.
